Parcel Culture पार्सल संस्कृती


आपण जेवत असतानाच कुणी पाहुणा आला की, हातात ताट घेऊन आत पळत जायची पद्धत तेव्हा आली नव्हती. जे आपल्या पानात, ती चटणी-भाकरी चटकन वाढली जायची आणि भूक असो वा नसो, दोन घास मायेचे स्वीकारून अतिथी तृप्त व्हायचा. आता मनात असूनही बदलत्या जीवनशैलीनं आपले आग्रहही समजूतदार झाले; पण आता समजून घ्यायचं म्हणजे नेमकं किती समजून घ्यायचं, हेच समजण्याची पंचाईत झालेय. अशीच पंचाईत माझी अलीकडं झाली.




अनेक दिवसांचा आग्रह आता दूर लोटणं अवघड झाल्यानं शेवटी श्रीकांत अन्‌ मृदुलाला मी कळवलंच ः "येतो येत्या शनिवारी जेवायला.'
त्यांना झालेला आनंद मला फोनवरही जाणवत होता. केवळ आपण एखाद्याकडं "जेवायला येतोय' म्हटल्यावर समोरच्या माणसाला एवढा आनंद होतो, ही गोष्टच केवढी सुखद आहे.

तासभर आधीच गेलो. थोड्या गप्पा होतील; मग सावकाशीनं जेवण. खरं तर जेवण हे केवळ गप्पांसाठीचं निमित्त. एकमेकांचा मैत्रभाव साधणारा एक रुचकर दुवा! पाच-दहा मिनिटं गप्पा झाल्यावर उत्साहानं श्रीकांत म्हणाला, "तुम्हीच सांगा, कुठलं हॉटेल "प्रीफर' कराल? "स्वीकार' गार्डन रेस्टॉरंट आहे, "अतिथी'तलं फूड मस्तच!, "सुरभि'मध्ये कॉंटिनेंटल डिशेस..! चॉईस इज युवर्स! अगदी न संकोचता सांगा...'
संकोचायलाही पुरेसा वेळ नव्हता. जे मला कळत होतं, ते खरं होतं की जे खरं होतं ते मला समजत नव्हतं, कुणास ठाऊक! बागेत फिरायला निघालेला माणूस पाय घसरून तलावात पडावा, तसं काहीसं.


"हे बघा श्रीकांत, तुम्हीच ठरवा.'


"अस्सं कस्सं? तुम्हा आमच्या घरी आलायत नं जेवायला?'


तोच धागा शिताफीनं पकडून मी म्हटलं, "अहो, मग घरीच जेवू या नं. अगदी साधी मुगाच्या डाळीची खिचडीही चालेल; पण घरी जेवू या. घरात जेवायची गंमत वेगळी आहे.'



श्रीकांत-मृदुलाची बोलकी दृष्टभेट टिपायला वेगळ्या कॅमेऱ्याची गरज नव्हती. एकदम स्मार्ट टिचकी वाजवून मृदुला म्हणाली, "वॉव! ही तर बेस्ट आयडिया! घरीच जेवू या. खूप गप्पा होतील. तुम्ही बोलत बसलात की ऐकावंसं वाटतं. बाहेर काय, लगेच उठावं लागतं!'

चला! मी सुटकेचा निःश्‍वास सोडला. खूप आग्रह करून घरी जेवायला बोलावणाऱ्या चाहत्यांच्या घरात मला चक्क "घरचं' जेवायला मिळणार होतं. वेगळ्या हातचं - मनापासूनचं!
ड्रॉवर उघडून मेनूकार्ड काढून तेवढ्यात दोघंही ठरवू लागले : "हे बघ श्री, सुरवातीला हराभरा कबाब असू दे. व्हेज मखनी, रुमाली रोटी, मग पनीर फ्राईड राईस...'

फोनवर ऑर्डर दिली गेली. माझी मुगाची खिचडी मूग गिळून बसली!
श्रीकांत म्हणाला, ""आत्ता अर्ध्या तासात पार्सल येईल. हां, इथल्या "सागर'मधलं फूड बाकी...'
दोघांच्या आतिथ्यात कमतरता नव्हती; पण लिफ्टनं पायउतार होताना मन समाधानानं भरलं नव्हतं. वेळ, प्रवास न्‌ खर्च करून गेलेला माणूस एखाद्याच्या घरी फक्त "पार्सल'चं खाद्य खायला जात नसतो; अगदी साधं; पण ज्यात गृहिणीचं मन मिसळलंय, अशा गोष्टीनं आतिथ्य होतं. अशा मनपरंपरेत वाढलेल्या मला पार्सलपरंपरेशी जुळवून घेताना थकायला होत होतं. एवढा कंटाळा, एवढा औपचारिकपणा असेल तर केवळ पैसे मोजून आतिथ्याचा हव्यास तरी ओढवून घ्यायचा कशाला, या प्रश्‍नाचं उत्तर सापडत नव्हतं. आता कशालाही "व्वा!' म्हणावं तर लगोलग उत्तर येतं - "हे श्रेय माझं नाही. "अन्नपूर्णा'तून आणलंय!'
दिवस "पार्सल'नं सुरू होतो; "पार्सल'नं संपतो. ऑफिसला जाताना निघण्याची तारांबळ म्हणून "चार पोळ्या, 200 ग्रॅम भाजी' पार्सल, तर रात्री घरी जाताना "आता कुठं स्वयंपाकाचा कुटाणा; जातानाच नेऊ या पाव-भाजी पार्सल!'
आजारपण, वार्धक्‍य, एकाकीपण, अचानक, अनपेक्षित आलेले खूप पाहुणे आणि आणखीही काही असे क्षण असतील की जिथं "रेडीमेड पार्सल' आणणं गरजेचं आहे. तिथं ती गोष्ट सुविधा ठरते; पण रग्गड पैसा, भरपूर आळस, लाडावलेलं सुखवस्तूपण, फक्त कंटाळा, चट्टू खाण्याची चटक अशा ठिय्या मारून रुतलेल्या असंख्य घरांतल्या वृत्ती-प्रवृत्तीनं आता नव्या समस्यांची पाळणाघरे सुरू केली आहेत!

घरातलं स्वयंपाकघर म्हणजे फक्त पार्सलचं गोडाऊन झालं तर तिथल्या मुलांचं पालन सुखरूप होईल; पण पोषण मात्र होणार नाही. पालन पदार्थांनी होतं; पोषण भावनांनी! आई-बाबा दोघांचाही ध्यास जेव्हा मिसळतो; तेव्हा ताटातल्या पदार्थांना येणारा सुवास कुठल्याही बिलानं चुकता होणारा नसतो. अगदी घरातलं साधं खिमट लोणचं असेल, फोडणीचा भात असेल, गूळ-चपातीचा लाडू असेल...पदार्थ अगदी साधे! पाच मिनिटांहून वेळ लागणार नाही; पण त्यात एक घर मिसळलेलं असतं. चव त्या घराची असते!

कुणी म्हणेल ः सांगायला काय जातं? हल्लीची मुलं खातात का हे असलं? हल्ली चायनीज हक्का नूडल्सवर हक्कानं ताव मारणारी मुलं आहेत. तुमचं सांगणं कालबाह्य आहे! मजा म्हणून खाण्याचे पदार्थ हेच जर रोजचे खाण्याचे झाले तर घर न्‌ हॉटेल यात वेगळेपण काय उरलं? आणि अन्नपदार्थांतलं सत्त्व फक्त चवीत असतं? की त्याच्या पोषणमूल्यांत? एकत्र मायेनं गुंफून साधं-सात्त्विक जेवण्यात? आता गंमत म्हणून, फॉर अ चेंज म्हणून "घरी' जेवू या, असं म्हणणारी घरं वाढत आहेत. सगळेच काही इतके गर्क नाहीत; पण बटण दाबल्यावर सुख दारात हजर, हा आभास नको त्या दिशेनं घेऊन चालला आहे. अनेक लोक हे ऐकण्याच्याही मनःस्थितीत नाहीत; इतकी रेडीमेड सुखाची सवय पटकन्‌ बेफाम वेगानं वाढत आहे. या सर्व सोईंनी वेळ वाचतो, हे खरंच आहे; पण त्या वाचलेल्या वेळेचं काय करायचं, हे स्वतःपुरतं ठरवायला हवं.

जाहिरातीतले स्टार्च इस्त्रीतले पप्पा-मम्मा न्‌ घरातले आई-बाबा यातला फरक अधोरेखित होतो, छोट्या छोट्या गोष्टींतील आपल्या गुंतवणुकीतून. एखाद्‌ वेळची "सोय' जर "कायमची व्यवस्था' होत असेल तर नातीही पार्सलचीच ठरतील! त्याला फक्त लेबल्स असतील; पण त्यात तिन्हीसांजेच्या आठवणींची ऊर्मी नसेल.

आज जी आळशी, सुखवस्तू घरं पार्सलसंस्कृतीच्या पायावर उभी आहेत, त्यांच्या हाती पार्सलनंच पुष्पगुच्छ येणार! पार्सलनंच केक येणार आणि हॅप्पी बर्थ डेचं एक स्वतःची सहीसुद्धा नसलेलं ग्रीटिंग! त्या वेळी जरा वळून पाहताना, आपण आपलं वात्सल्यही पार्सलनंच पाठवलं होतं, या वस्तुस्थितीची जाणीव असायला हरकत नाही. कृती स्वीकारायची ती परिणामासकट!

आधुनिकता, व्यग्रता कितीही असो; नाती एकमेकांशी वा समाजाशी जोडताना थोडी तोशीस पडतेच. प्रसंगी अडचण, चिडचीड, वैतागही उद्भवतोच. तारांबळ-गोंधळ-श्रमही होतात; पण घर नावाच्या समाजात न्‌ समाज नावाच्या घरात एकमेकांना गुंफताना अनेकदा इतकी सावध अलिप्तता नाही चालत. सिमेंटची अलिप्तता घराच्या पायरीसाठी ठीक; पण सिमेंटमध्ये बीज रुजणार नाही. पहिल्या पावसानं टणक ढेकूळ विरल्यावर त्याची मऊ माती होते. पुढं तेच मातीचं मऊपण बीजांकुरांनी हिरवळून येतं. अनेकदा आयुष्यातही रुक्ष अलिप्तता सोडावीच लागते; नाती एकमेकांत दरवळताना एकमेकांसाठी राबायची तयारी लागते.

आजच्या यंत्रयुगाला विसाव्याचे क्षण परवडणारे नाहीत; हे सगळ्यांनाच कळतं; पण तरीही ओढीनं जमवलेले विसाव्याचे क्षण पुन्हा यंत्राच्या स्वाधीन करणं हे केव्हाही समर्थनीय नाही. एकमेकांतील निरपेक्ष सहजता ओसरली तर "शब्द'सुद्धा "पार्सल'मधून आल्यासारखे उमटतील; पण प्रकटणार नाहीत.
श्रीकांत न्‌ मृदुलानं ओढीनं जे अगत्य केलं, ते त्यांच्या माहिती व तंत्रयुगाच्या संदर्भांना धरून अगदी योग्यच आहे; पण त्या हद्दीपलीकडं भावनांचाही एक सुकोमल प्रदेश असतो. जिथं "मन' व्यक्त करताना मनाचाच आधार घेतला की, एक अपार आनंद असतो, हेही त्यांना समजायला हवं!
दोघांनी खूप सारे पैसे खर्च करून "पार्सल'ने घरचं अगत्य केलं; पण त्याहीपेक्षा घरातला साधा "माझ्यासाठी' केलेला चहा मला अधिक उबदार वाटला असता!

Dahi Wada

Ingredients:
1 Cup Urad Dal
2 TBsp Green Chili Paste
2 TBsp Fresh Ginger Paste (omit for Jain recipe)
Salt to taste
Few pieces of cashews and raisins (optional)
6-7 Tbsp Tamarind and Date Chutney
4 Cups Whipped Yogurt
Big Bowl of Cold Water Room Temperature
Salt to Taste
Roasted Cumin Powder
Red Chili Powder
Oil to Deep Fry
Chopped Cilantro

Preparation:

Clean Dal so that there are no small stones that are sometimes found with them.
Wash thoroughly.
Soak for 3-4 hours.
Strain Dal and blend with just the right amount of water, not too much, until it blends smoothly.
Grind to a little coarse consistency.
Add green chili, ginger paste, salt, a handful of cashews and raisins.
Mix it well.
Dough is ready for frying.
To deep fry, heat the oil in a wok.
Either with your fingertips or with a tablespoon gently ease the Dal mixture into the heated oil. Care should be taken not to scald yourself. The Dal mixture will puff up in the hot oil.
Gently turn them over and fry until they are golden brown.
Take them out of the frying pan and drain on a paper napkin.
Fry only 4-5 balls at a time so you don't overcrowd the wok.
Wada is ready.
Soak the balls or wada in a large bowl of about 3 glasses of room-temperature cold water for about 20 minutes.
Gently remove the wada from the water and press them between your palms to remove any oil and water.
Place the dry wada on a platter.
Whip up the plain yogurt. Add salt. If the yogurt is old and sour, add one teaspoon of sugar (optional).
Pour whipped yogurt on wada on the platter.
Pour date and tamarind sauce- sweet chutney on top of yogurt.
Garnish with chili, roasted cumin powder and cilantro.
I sometimes add black rock salt and black pepper (optional).
Refrigerate it for an hour or two.

ही डिश तयार करताना वाहिनी ची परीक्षा सुद्धा घेतली जाते आणि पाककलेत किती पाण्यात आहे हे सुद्धा समजते

क्रिकेट विरुद्ध प्रेयसी Cricket Vs Girlfriend


१) पुढचा सर्व महिनाभर मी फक्त माझ्या मित्रांशीच जास्तीत जास्त वेळ बोलेन. त्यांच्या घरी मॅच पहायला जाईन किवा त्यांना माझ्या घरी बोलवेन. त्यामुळे तुला माझ्यासाठी वेळच नाही अशी भुणभुण करायची नाही. केल्यास दुर्लक्ष केले जाईल.

२) माझा फोनही याकाळात बिझी असेल. तेव्हा फोन घेतला नाही म्हणून सतत करायचा नाही. एसएमएस पाठवायचे नाहीत. इग्नोरच केले जातील. फोन बिझी असला तर मी क्रिकेटवर चर्चा करतोय असे समजून गप्प बसायचे.

३) याकाळात मी तुला भेटेनच असे नाही. मॅच बुडवून तुला भेटायला येण्याचे कष्ट मी घेणार नाही. पण तरी समजा, एखाद्या दिवशी मी भेटलोच, आलोच एखाद्या मॅचच्या दिवशी आणि नाही फार बोललो तर त्याचे भलतेसलते अर्थ काढायचे नाहीत. तुझे माझ्यावर प्रेमच नाही, तू दुसरीकडे कुठं अडकलास का, तू का असा वागतोस माझ्याशी?, अशी भंकस करायची नाही. मी काहीही ऐकून न घेता निघून जाईन आणि मग वर्ल्डकप संपेपर्यंत भेटणार नाही.

४) भेटणे, जेवायला जाणे, पार्ट्या, तुझ्या मैत्रिणींचे वाढदिवस असे सगळे कार्यक्रम रहित करण्यात येतील. कुठल्याही प्रकारचा आग्रह करण्यात येऊ नये.

५) एक महत्वाचं – तुला क्रिकेटमधलं काहीही कळत नाही, असं सांगण्याची वेळ माझ्यावर आणायची नाही. “आज कोणाची मॅचे…?” असं लाडात येऊन विचारल्यास आपलं ब्रेकअप होण्याची शक्यता आहे. किमान रोजचा पेपर वाचायचा, किमान भारताची मॅच कधी आहे हे पहायचं. आणि प्रश्न अजिबात विचारायचे नाहीत.

६) मुलींना फारसं क्रिकेट कळत नाही हे लक्षात ठेवायचं. त्यामुळे उगीच आपल्याला फार कळतं, अशा अविर्भावात माझ्याशी चर्चा करायला यायचं नाही. चर्चा केली जाईल, पण तेव्हा मी जे काही सांगतोय ते केवळ भक्तीभावानं ऐकून घ्यायचं. क्रिकेटविषयी क्रिकेट सोडून बोलायला तू काही मंदिरा बेदी नाहीस हे लक्षात ठेवायचं.

७) मी मॅच पाहत असताना फोन करुन ‘रोमॅण्टिक’ गप्पा मारण्याचा प्रयत्नही करायचा नाही. मॅचमधला रोमॅण्टिसिझम मला पुरतो.

८) सचिन तेंडुलकर कितीही आवडत असला तरी “ए, सचिन मारेल का आज सेंच्युरी…?” असले बावळट प्रश्न विचारायचे नाहीत. बावळट यासाठी की तेव्हा सचिन नाही तर सेहवाग किंवा युसुफच क्रिझवर असतो. उगीच 'स्मार्ट'नेस दाखवायचा नाही.


९) प्रेमापेक्षा क्रिकेट जास्त महत्वाचं असतं, हे तू लक्षात ठेव. त्यामुळे “तूला माझ्यापेक्षा क्रिकेट जास्त महत्वाचं वाटतं का…?” असा प्रश्न विचारायचा नाही. मी होकारार्थी उत्तर दिल्यास परिणामांना मी जबाबदार राहणार नाही.

१०) सगळ्यात महत्वाचं – हे सगळे नियम पाळले गेल्यास आणि माझ्या मनाप्रमाणे सगळ्या मॅचेसचे निकाल लागत गेल्यास मी कधीमधी एखादा फोन करीन (आणि ते ही थोडावेळच).





Girlfriend to her Boyfriend

जर ह्या mail चे reply त्या मुलाच्या girlfriend ने दिले तर ती कशी देईल???

तशी मला तुला उत्तर लिहायची अजिबात इच्छा नाहीये पण तुलाही समजू देत कि मी काय विचार करते ते. OK, let’s come to the point. तुझ्यासारखे रामायण लिहायला माझ्याकडे वेळ नाही. क्रिकेट संपल्यावर भारत जिंकला म्हणून party करायला त्या सचिन, सेहवाग किंवा युसुफ कडेच जा. माझ्याकडे तुझ्यासाठी वेळ नसणार आहे, हे लक्षात ठेव आणि चुकून भारत हरला तर माझ्याकडे रडत यायची गरज नाही. मंदिरा कडे गेलास तरी माझी हरकत नाही. तुझ्या आयुष्याला पुरेल एवढे प्रेम तू तुझ्या त्या फडतूस क्रिकेट वर कर आणि वेळ वाया घालवणाऱ्या त्या क्रिकेट सोबतच लग्न कर. उगाच माझी अपेक्षा ठेवू नकोस. कारण मी मनुष्यप्राणी आहे रोबोट नाही – वेळीच play & pause व्हायला...

एक महत्वाचे – तुला जर वाटत असेल कि जगात तू एकटाच मुलगा राहिला आहेस तर तू चुकीचा विचार करतोयस... खरं तर ८०० मुली मागे १००० मुल फिरताहेत, हे लक्षात ठेव. ;)

जास्त समजावून सांगण्यात मी वेळ वाया घालवत नाही कारण तुला तेवढी समज नाहीच... चुकून क्रिकेट तेवढे कळते. नवल आहे...!!



एक सूचना: ह्या कथेतील सगळे पात्र काल्पनिक आहेत. त्यांचा कुठल्याही घटनेशी किंवा व्यक्तीशी काहीही संबंध नाही. असल्यास तो एक योगायोग समजावा.

Schezwan Paneer

Ingredients:

Paneer - 120 gms
Capsicum - 1 diced
Onion - 1 chopped
Ginger - 1tsp chopped
Garlic - 1 tsp minced
Tomato sauce - 2 tsp
Red chili sauce - 1tsp
Schezwan Sauce - 2Tbsp
Oil - 1/4 cup for shallow frying paneer
Cornflour - 1 1/2 tsp
Sugar - 1/4 tsp
Salt to taste


Preparation :

Shallow fry the paneer and drain excess oil.

In the same pan add the ginger and garlic and saute till the garlic is slightly brown.Add the chopped onion and saute till light brown.

Now add capsicum and saute for 2 minutes.The capsicum should be crunchy.Now add the salt, sauces and saute for 2 minutes.

Then add 1 cup of water and allow to boil for 2 minutes.Now add the fried paneer and simmer for 2 minutes.

Mix 1 1/2 tsp of cornflower with 6tbsp of water to thicken the sauce.

Finally add sugar and mix well.

Garnish with chopped spring onion and serve hot.

Hara bhara kebab

Ingredients:

Potatoes,
peas,
carrots
cauliflower









Preparation:

Potatoes, peas, carrots and cauliflower are boiled and crushed. It is then mixed well with the chopped onions, grated paneer and a paste made out of coriander, mint and green chilli. Refined flour is added and it is made into balls placing a cashew nut on top. It is dipped rolled in breadcrumbs and deep-fried. It is garnished with onion and lemon wedges.

Vegetable Pulao

Ingredients :

2 cups Rice 1 Carrot 1 Capsicum1 cup Peas 2 Potato 1 Onion ½ cup Butter ½ tsp Cumin Powder ½ tsp Mustard seeds ½ cup Tamarind Paste 1 tbsp Crushed Red Chilies 1 tbsp Garlic Ginger Paste ½ bunch Coriander 2 tbsp Oil Salt to taste



Preparation :

In a pan take oil. Put chopped onion, garlic ginger paste, and mustard seeds in the pan and slightly fry.
Add carrot, peas, capsicum, and potato and slightly sauté. Add half cup water and cook to tenderness.
Add salt, cumin powder, and crushed red chili and sauté again. When the vegetables are cooked, add tamarind paste, butter and pre-boiled rice in it and leave to cook.
Dish it out after 5 minutes.

Classic Samosa!!!!

Ingredients:

Whole wheat flour: 1/2 cup
All Purpose flour: 1/2 cup ( if using only APF, double the quantity)
Salt: 1/2 tsp
Carrom seeds (Ajwain): 1/2 tsp
Coriander/Parsley flakes: 1tsp (use any dry green flakes)
Butter or Oil: 3 tsp
Water: 1/4 cup , add more if required

Method for making Samosa dough:

In a bowl, mix the dry ingredients - whole wheat and all purpose flour, salt, ajwain, dry coriander flakes. Add butter (at room temperature) or oil into the flour and mix it well. Slowly add water to the mix and knead the flour to make a smooth but tough dough (the dough is slightly tougher than chapati dough but should be comfortable to work). Wrap the dough in a plastic wrap and set aside for at least half an hour.

Ingredients for the filling of Potato/ Aloo Samosa:

Potatoes: 2-3 (boiled and diced)
Sweet petit peas: 1/4 cup (thawed and soaked in warm water if using frozen)
Paneer: 2tsp (cut into small cubes), optional
Olive oil: 1 tsp
Cumin seeds: 1 tsp
Onion: 1 (finely chopped)
Green Chillies: 2 (finely chopped)
Ginger : 2 inch piece, finely chopped
Fresh Coriander: 2 tsp
Fennel and Coriander: 1 tsp (crushed in mortar)
Salt : To taste
Cashews, Peanuts: 2 tsp (roasted)
Raisins: few
Note: Gently crushed fennel and coriander in mortar and pestle are the key taste defining ingredients in the samosa.

Method to Prepare Potato Stuffing:

Boil the potatoes, peel of the skin and dice into small cubes.
Heat oil in a nonstick pan.
Add cumin seeds, onion and ginger julliens.
Saute for couple of minutes, then add the potatoes and peas, followed by seasoning to taste.Let it cool for a while before adding to the pastries.

Preparation:

Knead the dough again for 5 minutes before making balls. Divide the dough into equal parts.
Take out one small ball and roll into a circular disk like chapati (as thin as you can). Make a small disk for cocktail style samosa and a big disk for standard size samosa.
Cut the circle in half so you have two half-moons.
Roll the dough in thin circles, Cut it open in the middle

To assemble the samosas, take one of the half moons, put about a tablespoon or two of the desired filling (potato, peas/corn or spinach). Fold from one side towards the center and then from another side (seal by gently dabbing the edges with water).

Take a semi-circle match end to end, this would make a cone. The cone is ready, turn it upside down and fill with stuffing. Simply press the bottom with fingers. Continue until all the samosas are assembled. Frying the Samosas: - In a heavy bottomed skillet, heat heat the oil until it reaches about 220 degrees F. Drop one by one few samosas in the skillet and fry on medium heat till it turns light golden brown.

Classic Samosa!!!!

Hot apple and orange pakoras with herbs













Ingredients:


Apples : 2
Oranges: 2
Banana: 1
Chickpea Flour : 1 cup
Rice Flour : 2 tsp
Salt : 1/2 tsp or to taste
Paprika: 1/4 tsp
Black Pepper: 1/4 tsp
Chat masala: 1/2 tsp
Grated ginger: 1tsp
Parsley flakes: 1/2 tsp
Basil flakes: 1/2 tsp
Rosemary : 1/4 tsp
Dill flakes: 1/4 tsp
Baking Powder : 1/4tsp
Water : 3/4 cup
Cooking oil: 1 cup
Tamarind and Tomato sauce for serving

Preparation:

Wash and pat dry the apples with kitchen towel.
Cut the fruits into wedges with a sharp knife or with apple slicer.
In a medium bowl take chickpea flour (besan), rice flour.
Mix well, add spices and herbs to taste plus baking powder.
Slowly stir in enough water until the mixture reaches the consistency of whipping cream.
Beat the batter well and set aside to coat the fruits.
In a heavy bottomed pan/skillet on the stove, heat oil.
Check the temperature of the oil by dropping a small drop of the batter in the oil.
If the oil is ready and hot, coat the apple wedge with the batter and drop it one by one in the hot oil.
Fry on medium heat till it turns golden brown from both sides.
Keep the wedges on the paper towel to soak the excess oil.
Repeat the process for orange and banana wedges by frying few at a time until the entire material is used.
Serve it straight from the pan to the platter with sweet tomato and tamarind chutney for dipping the wedges.

Red velvet halwa with Carrots and Roses

Ingredients:


Carrots: 2 cups
Dates: 4-5 (optional)
Desi ghee: 5 tsp
Full cream milk : 3 cups
Jaggery powder : 3/4 cup or to taste
Khoa : 1cup
Rose Water: few drops
Saffron strands : few
Cardamom powder: 1/2 tsp
Mixed Nuts: 1/2 cup

Preparation:

Wash, peel and grate the carrots by using food processor or electric vegetable chopper.
Heat desi ghee in a thick bottomed skillet and saute the grated carrots for 5 minutes.
Now add full cream milk, sliced dates and cardamom powder into the carrots and let it cook on low heat for 15-20 minutes, till the milk is absorbed and carrots are cooked.
At this stage to the mix, add saffron strands dissolved in milk.
Now add jaggery powder (or brown sugar) and khoa to the carrots and mix gently.


Let it cool down for 5 minutes, then add few drops of rose water/rose essence for fragrance in the halwa.

Garnish with mixed sliced almonds, cashews, raisins and shredded khoya and saffron strands.

गव्हाचा चिवडा Ghawacha Chiwada

गव्हाचा चिवडा
साहित्य- भिजवलेले गहू २ वाट्या, १ वाटी लसूण, मिरच्या २-३ ह्याची पेस्ट किंवा तुकडे करा. धने जिरे पूड, बडीशोप भाजून, बेदाणे, तिखट, मीठ, हळद खसखस भाजून, आमसूल पावडर, तेलाची मोहरी हिंग व कढीपत्ता ह्याची फोडणी
कृती - प्रथम गहू ६ तास पाण्यात भिजवा. नंतर उपसून कापडावर टाकून कोरडे करा व तेलात गहू पोहे किंवा डाळ तळतो तसे तळा. कागदावर तळून टाका. म्हणजे तेल राहात नाही नंतर तेलाची मोहरी, हिंगाची फोडणी करून त्यात कढीपत्ता बारीक चिरलेला लसूण मिरच्या, तिखट टाकून खरपूस भाजा. नंतर भाजलेली खसखस, धनेपूड, जिरेपूड, मीठ, हळद, आमसूल पावडर, बेदाणे, तळलेले गहू टाकून चांगला मिसळा. आवश्यकता असल्यास सजावटीसाठी व चवीसाठी कोथिंबीर टाका.

तांदळाचा गुजराती चिवडा
साहित्य - तळण्यास भरपूर तेल, चांगले तांदूळ, काबूली चणे, वाटाणा, दाणे, हिरवे मूग, बेदाणे, खोबर्‍याचा कीस, दाण्याचा कूट, तिखट मीठ, थोडी हळद, तीळ २ चमचे, कढीपत्ता, तळलेले काजू, कोथींबीर, मिरच्या, हिंग.
कृती - प्रथम तांदुळ धुवून वाळवून कोरडे झाल्यावर भरपूर तेलात मंदाग्नीवर तळा. मुरमुर्‍यासारखे फुगतात. नंतर क्रमाक्रमाने काबुली हरभरे, वाटाणे, थोडे दाणे, काजू, हिरवे मूग तळा. २ चमचे तेलात तीळ परता. तेलाची फोडणी करून त्यात हिंग मिरच्या, कढीपत्ता, तिखट टाकून परता व शेवटी तळलेले साहित्य, मीठ, दाण्याचा कूट थोडी हळद, तीळ व कोथींबीर टाकून सर्व मिसळा. गुजराती लोकात हा चिवडा प्रसिद्ध आहे.

मी कधीच जास्त तिखट खात नाही !!!

कधी तरी झणझणीत खायची इच्चा होते तेव्हा ठेचा खातो घरी बनवलेला ..



मी काही काम साठी महिंद्र मधे नाशिक ला सातपूर भागात गेलो होतो ....



घरकुल मटण मसाला ची जहिरात आठवते का !?
पहा पहा जरूर पहा .... झणझणीत काय असते ते कळेल ......
तशी मिसळ नाशिक ला खाल्ली ... पहिल्यांदा ......!!!



  • शामसुंदर: सातपुर MIDC कोणीही सांगेल हो. पाव, पापड, दही आणी तर्री फुकट मिळते शेवटी नाशिकशहर ते
  • जुन्या CBS जवळ आहे कोर्ट Canteen आहे . ११.३० ला मिसळ संपते.
  • गार्डन मिसळ: सारडा कन्या शाळे समोर, नेहरु गार्डन जवळ सकाळी ते १० या वेळेत ही गाडी लागते.


नाशिक मधे तर्री अमर्यादित असते कितीही घ्या जास्तीचे पैसे नाही हो लावत ते. तुम्ही किती खाऊ शकता तोविचार करा.. .................


पुण्यात मिसळ (!???)
अबे मिसळ काय आहे माहित आहे का ?
असेल तुमची झणझणीत ... आमची मिसळ आणीबाणीत ....
हे पुणेरी मिसळ म्हणजे उगीच शब्द माहित आहे म्हणून काहीतरी कशाततरी मिसळले जाते बास!!
आणि तर्र्री मागून तर पहा ह्यानच्या कडे! ..
.... अशी तोंड करतात ... सुतकात ...जावूद्या !








मिसळ = कादा-पोहे + मटकी उसळ + छोले सुद्ध + अजून काही खेरखार असेल तर तो पण
बरोबर
तर्री मिळतच नाही. मिळाली तर ती समजावी !!!!!!!!

त्याऐवजी ईथे "सॅंपल" देतात. तर्री म्हणजे झणझणीत तिखट रस्सा. पण ईथले सॅंपल म्हणजे फ़क्त रंगाने लालअसणारा, तिखट वाटणारा रस्सा.

पुण्यात मिसळ बरोबर ब्रेड चे स्लाईस देतात. त्यात लादी पावाची मजा येत नाही.


खडकवासला गावात छोट्या टपऱ्या दुकानात मिसळ खाल्ली एकदा तेव्हा कुठे जिभे पासून डोक्या पर्यंतझिणझिण्या आल्या ...

मी अजून शोधात आहेच कि कुठे कुठे चांगली मिसळ मिळू शकेल...

पुणे येथे जे ठिकाणे प्रसिद्ध आहेत तिथे अजिबात चांगली मिसळ मिळत नाही !!
